Interview of a Gluten-Free Business Professional

Hi, my name is Misty and I am interested in opening a business that caters to a little known group of people who have a sensitivity to gluten. Getting ideas from another business professional who has already accomplished this goal will help me out greatly so I can get a general idea of how realistic of a goal this is for me.

If you are a business professional and don't mind taking some time to help me out, I'd greatly appreciate it. I don't know anyone in the Mid-West who even has any idea what Celiac Sprue is but I found a very nice woman in California named Melanie Weir who allowed me to virtually interview her.
